I’ll admit. I’m not as good with eating my vegetables as I’d like to be. I do, however, have a massive sweet tooth. I was determined to eat vegetables and find a way to satisfy my sweet tooth all in one snack for my day out at the park. The solution? A fruit topped salad!
The salad was simple: Spinach as the base, topped with sliced almonds, raisins and two of my favorite fresh fruits strawberries and kiwis. Drizzle a bit of olive oil and/or lemon juice and it’s ready!
